Ingredients

Basic Preparation

150 g tomatoes (German Name “Liebesäpfel” in Austria “Paradeiser “)
1 pc red onion
4-6 pinches Salt
4 pinches brown sugar (I prefer brown sugar)
2-3 tbsp Olive oil

Optional vinegar or lemon juice

1-2 tbsp lemon juice
1-2 tbsp white wine vinegar (or balsamic vinegar or red wine vinegar)

Herbs

1-2 tbsp fresh herbs (basil, marjoram, thyme, lovage, cress )

Wash and dry the tomatoes, put the remaining ingredients within reach.

3. Which Vinegar goes well with Tomato Salad.

White wine vinegar, balsamic vinegar and red wine vinegar are good companions, but require sparing use.

The strong acidity very quickly overpowers the delicate tomato flavor.

Ripe tomatoes can be cut open and seasoned without vinegar, only with salt, pepper, sugar and olive oil.

The salad without vinegar tolerate a little lemon juice and support the delicate tomato flavor with fully ripe fruit.

Gourmets boil down balsamic vinegar to a balsamic glace and drizzle dabs of it over tomatoes cut in half or sliced.

4. Suitable Herbs to the Tomato Salad

For herbs, you can consider basil, marjoram, thyme, lovage, cress and parsley. 

Star chefs finely pluck the basil leaves. This prevents them from turning brown.
