Simple instructions for preparing risotto with pumpkin.
Ingredients
1/2 | Piece | pumpkin |
1 | Cup | risotto rice |
50 | g | butter |
4 | Cup | Vegetable broth (I use more as needed) |
4 | Pinches | primal salt |
4 | Pinches | black ground pepper |
2 | Pinches | Cayenne pepper |
4 | Pinches | grated nutmeg |
2 | Pinches | brown cane sugar |
100 | g | grated parmesan |
2 | EL | roasted, salted pumpkin seeds |
2 | tsp | pumpkin seed oil |
Instruction
Preparation step 1
Peel pumpkin
Peel the pumpkin with a knife and thinly remove the tough skin.
Preparation step 2
Deseed pumpkin
Halve the pumpkin and deseed it with a spoon.
Preparation step 3
Prepare Risotto
Cut the pumpkin, add to the pot with the rice and butter.
Sauté the rice and pumpkin for four minutes until colorless, stirring as you go.
Preparation step 4
Deglaze risotto
Deglaze the risotto with the vegetable stock and gently simmer for 18-20 minutes, stirring.

Prepare cheese
Finely grate the parmesan cheese.
Preparation step 6
Finish risotto
Check the doneness of the rice grains.
Season the risotto with salt, pepper, nutmeg and cayenne pepper.
Add butter or optionally olive oil and mix until creamy.
Preparation step 7
Serve
Arrange the risotto on hot plates.
–> Decorate with pumpkin seeds
–> Sprinkle with a little cheese
Optionally, you can add a few drops of pumpkin seed oil.

–> We prepare rice and pumpkin at the same time and that works very well with the cooking time.
–> Please cut the pumpkin pieces thin and small accordingly.
Tastes great with any type of pumpkin:
–> Use Hokkaido, nutmeg or butternut squash

–> Add the washed, trimmed spinach 3-4 minutes before the end of the cooking time and cook.
