Ingredients

basic recipe

30 g butter (or vegetable oil (vegan))
300-450 g peas (More peas, more flavor!)
1-2 Piece onions (or 4 shallots, these have a finer taste!)
1/2 Piece glove of garlic
40 ml dry white wine (or Prosecco)
800 ml cold water (or broth)
1-2 Cube Vegetable broth (or powder)
4 Pinches primal salt
3 Pinches black ground pepper
3 Pinches nutmeg
2 Pinches Cayenne pepper

1 Cup soy cream

with cream

1 Cup Cream
1/2 Bunch fresh parsley (optional thyme, lovage, cress)

4 Piece wiener sausages (vegan/vegetarian alternative soy bratwurst)
4 tbsp bacon cubes (vegan/vegetarian product)

Decoration and soup insert

4 tbsp bread cubes (crispy fried)
1 Bunch fresh herbs (parsley or lovage or chervil)
200 g Whipped cream (Put the icing on the soup, use vegan soy cream)
4 tbsp Créme Fraîche (Place in the soup in the form of dumplings, use vegan soy cream)

Instruction

Preparation step 1

The peas hide in the pea pods. Just carefully open and peel.

Prepare peas

Get fresh peas or frozen peas.

Peel fresh peas and put the peas in a bowl.

Basic recipe

Cut onions and garlic
Finely chop onion and garlic

Prepare onions

Peel the onions and garlic and cut into fine cubes.

Set a large tall pot on the stove, add butter or vegetable oil to the pot.

Sauté onion cubes and garlic cubes for the minced meat mixture.
Onion and garlic finely diced while sweating in a saucepan.

Prepare soup starter

Sauté the onion and garlic cubes over a moderate heat for 10 minutes.

–> Important note on garlic:

I don’t press garlic because it makes the garlic bitter and pungent in taste.

Then deglaze the soup mixture with the dry white wine and broth.

Season with salt, pepper, nutmeg and cayenne pepper.

Let the peas cook for 12-15 minutes, not boiling.

Optionally, you can strain the soup through a fine hair sieve or prepare it with the finely mixed fiber for serving.

You can fry sausages in a pan or heat a frankfurter or wiener in a little salted water.

Smoked tofu is a good substitute for smoked bacon.

Prepare tofu

You can cut tofu into cubes and fry them in the pan.

–> Mix up the soup
–> Put the peas in the soup on the plate
–> Pour in the frothed soup
–> Place the prepared tofu cubes in the soup.
–> Serve

Prepare bacon

You can fry some bacon cubes or bacon strips in the pan until they are crispy.

serving:
–> Mix up the soup
–> Put the peas in the soup on the plate

–> Add strips of bacon or sprinkle on diced bacon.
–> Serve

Bread cubes for croutons in a pan with foamed butter.

Optionally, you can add bread cubes to the soup.

Fry freshly cut bread cubes in a pan with butter.

Season with salt, pepper and thyme and serve with the soup.

3. Prepare Green Pea Soup

The soup should stay green, so here are a few tips:

Always cook pea soup quickly. You can do this without sweating the peas. Cook the soup without the peas and when the guests are there, add the peas and cook until soft, without the lid. Mix, strain and serve green.

If you like it, you can leave your pea soup a little thicker. The difference to pea stew is then no longer great.

4. Prepare Soup with Frozen Peas and Fresh Peas

Preparing the soup with frozen peas is no different than preparing it with fresh peas.

Please peel fresh peas from the garden, this is a meditative activity and is fun!

You can put frozen peas directly into the pot, the peas can also be frozen, which is even beneficial for preserving the beautiful, green color.

Please note the following: Always cook the soup from fresh or frozen peas without the lid and as quickly as possible.

Then the soup stays green. The soup turns gray to brown if you put a lid on the pot or heat the soup several times.

Light green, fresh soup looks better on the plate, that’s my recommendation.

Soup for the perfect dinner: Prepare the soup, pass through a fine sieve and stir over ice until cold. This keeps the soup green and you can heat it up when your guests are there. Before serving, mix the soup with the hand blender until fluffy, adding cold butter… WOW… DELICIOUS…

5. Prepare Split Pea Soup Info

The preparation with split peas is a little different.

You don’t have to put the split peas in water because the shell is already removed.

So add the split peas directly to the soup base as described above.

You can then cook the soup with the lid on.

Split pea soup always turns slightly gray, so it is better to cook this soup with a lid to save energy.

The cooking time is usually around one hour, please note the information on the packaging of the peeled peas.

Split pea soup is out of fashion, the soup is always gray. I do not like that! This is a boarding school soup 🙁

6. Vegan or Vegetarian Pea Soup

The presented soup is basically vegetarian or vegan. I have preferred this variant for some time because many guests and friends want to avoid meat and because a high proportion of plant nutrients is good for our well-being.

In summary:

Instead of cow’s milk cream, simply use soy cream, with the broth you pay attention to vegetable broth, with the soup you think of bread cubes and peas, instead of bacon you can prepare smoked tufo cubes as a garnish.

Alternatively, you can add smoked tofu to the soup, the smoked tofu tastes wonderful when fried.

7. Tips for Classic Pea Soup with Bacon or Sausage

The classic is served in Germany with a Wiener Würstel and prepared with bacon.

You can leave diced bacon crispy in a pan and then serve it extra with the soup.

Alternatively, a soy sausage can be used as a vegan or vegetarian soup accompaniment.

Note on heating the sausages:
My grandmother cut the sausages into small pieces and warmed them up in the soup just before serving.

–> The dish will look nicer if you heat the sausages in an extra pot.
–> To do this, briefly heat the sliced sausages in salted water, please do not boil.
–> Boiled sausage slices unfortunately bulge like shoe soles 🙂
