Ingredients

1 kg Mussels fresh
1-2 bunch Soup vegetables
1 bunch Coriander
2 pc young onions
1 tbs red berries
some Chili
1 tbs curry
250 ml Vegetable broth
2 slices Ginger
2 pc clove of garlic
3 tbs peanut oil
1 pc Lime
150 ml soy cream
100 ml white whine
1 tbs honey

Instruction

Preparation step 1

Prepare ingredients

Prepare all ingredients as listed in the list.

Place the mussels in cold water for about 10 minutes, then drain on a sieve.

Prepare stock

Bring the vegetable stock with finely chopped ginger and garlic to the boil to form the flavour.

Prepare vegetables

Soup vegetables consisting of carrots, yellow beets, parsley root peel and in fine Julienne cut.

Boil mussels

Sweat vegetables

Sweat half of the prepared vegetables in a wok with peanut oil, then add the rest of the vegetables and add the mussels.

Cook mussels

Deglaze the mussels with the white wine and the sieved vegetable-ginger-garlic broth.

Cook the mussels for 8-10 minutes with lid.

Prepare cilantro

Provide cilantro, wash, spin dry and finely chop.

Optionally, you can use parsley or Thai basil.

Prepare the red berries for serving.

Optionally, you can pestle the berries in a mortar and use only the fine outer skin for seasoning.

Serve

Strain the mussel stock, bring to the boil, season with cream, curry, lime juice, chili and honey and blend.

Blend the mussel broth and pour over the mussels.

Serve the mussels decorated with cilantro and red berries.

It is best to put the sea creatures in cold water after shopping.

The multiple washing is necessary because the sea creatures are often sandy. I would also like to answer the question of how to recognize broken shells.

The base of this preparation you can create with garlic or as described in the instructions below with soup vegetables.

The mussels taste better in combination with dry white wine or with Prosecco.

So that the curry comes out well, I still take cream or coconut milk and ginger to it.

Ginger is an optional ingredient as is cilantro.

5. Which Curry is the right one for Mussels?

Let’s take a quick look at the curry question as well.

It’s easier than you think. Reach into the spice rack at the supermarket and buy a yellow curry.

This is the easiest way. Madras curry is pretty great, it tastes a little more fruity.

From the hot curry I would leave the fingers, we want to bring a balanced preparation on the plate.

For the decoration and for the excellent taste there are two more info:

Curry sauces always need some sugar or honey or agave syrup.

The sugar balances the sharpness of the curry and makes the sauce smooth on the palate.

As a decoration, I recommend red pepper, which is sweetly spicy and pleases the eye.

Red berries are ideal as decoration for curry dishes.

boiled plantains, caramelized bananas, chickpea patties, rice noodles and flatbread.
