Simple instructions for preparing apple pancakes in variants.

Equipment
Instruction
Mixer pancake batter:
Prepare milk
Pour the milk into the tall blender jug and add the lemon zest.
Add ingredients
Add the flour and eggs to the milk.
Add salt, sugar and vanilla sugar.
Mix dough
Mix up the dough ingredients.
Prepare dough
Mix the batter with the hand mixer for 1-2 minutes.
Dough rest
Let the dough rest for 20 minutes.

Grandma’s apple pancakes
Prepare apple
Wash, halve and quarter the apple.
Cut out the apple cores from the apple quarters.
Apple pieces
Cut the apple pieces into thin slices.
Prepare pancakes
Heat a 24 cm diameter pan.
Put a little clarified butter in the pan and pour in the batter and spread it out.
Place the apple pieces in the liquid pancake batter.
Bake pancake
Bake the pancake longer on the first side.
Flip pancakes
Loosen the side of the pancake with a spatula and then turn.
Serve
Serve the easy apple pancake right out of the pan and enjoy!
You can optionally add cinnamon and powdered sugar to the pancake.
Gourmet apple pancakes:
Slice apple
Cut the coreless apple quarters into very fine slices with a slicer.
Put apple
Cut two sheets of parchment paper into a square and fold each twice.
Place apple blossoms on a small square of baking paper and sprinkle with powdered sugar.
Fold baking paper onto baking paper.
Cook apple
Bake the square of baking paper covered with apple blossoms in the oven at 180°C for approx. 15 minutes.
Bake pancake
Heat a 24 cm diameter pan.
Add clarified butter to the pan and pour in 75 ml of pancake batter.
Cut out
Flip the pancake and cook until done.
Turn the pancakes out onto a board and cut out rounds with a cutter.
Bake three more pancakes and prepare accordingly.
Detail cut
Cut out the pancake detail, you can use a 12 cm ring.
Glaze pancakes
Brush the cut out pancakes with maple syrup.
Apple flower
Take the freshly baked apple blossoms out of the oven and remove the baking paper from underneath.
Prepare receipts
Have the apple flower and glazed pancakes ready.
Prove
Place the glazed pancakes on the apple blossom and turn out.
Glaze
Glaze the top of the apple blossoms with maple syrup as well.
Portioning
Place one topped apple pancake on top of the other and glaze the top with maple syrup.
Heat the apple pancakes briefly in the oven at 140°C hot air for 7 minutes.
Serving
Arrange the apple pancakes in the middle of a plate.
Decorate the apple pancakes with mint, powdered sugar and pistachio slivers.

3. Best Apple Pancakes Recipe
My basic recipe consists of a simple pancake batter.
So that you can find the best recipe for your pancake orgy, I’ll add another tip here:
For fluffy pancake batter you can add a teaspoon of baking powder to the above recipe.
Mix the baking powder into the prepared batter and then bake the pancakes.
Please hurry up when placing the apple slices.
The baking powder will make the pancake rise in the pan as it cooks.
Forget the sparkling water idea, the fizz is unsuitable for fluffy, high-baked grandmother’s pancakes.
The amount of carbonic acid is just not enough to make the pancakes really fluffy 🙂
You can use a pan with a diameter of 24 cm or a large pan to bake the fluffy pancakes.
The large pan is recommended if you want to bake small pancakes, then three pancakes will fit in the pan.
By the way, my grandmother used an iron pan.
The pan was only used for egg dishes and pancakes and was always greased after use.
So the pan could never rust and the pan was ready for the next use.
Copper pan as a pancake pan:
Today I use a 24 cm copper pan for the preparation.
The copper pan is superior to any pan, this is due to the optimal heat conduction.
My pan is made of copper on the outside and the frying surface is made of stainless steel.
The pancakes do not stick in this pan and can be baked perfectly without a coating.
The right pancake ladle:
The choice of ladle or ladle is important to getting the right amount of batter into the pan.
I always use a small ladle with a capacity of 0.07 l, i.e. 70 ml.
Actually, the ladle holds 75 ml up to the edge, I always stay just under the edge of the ladle with the amount of dough.
The right amount of pancake batter:
My recipe results in 280 ml of pancake batter and that’s four ladles with 70 ml of batter each.
Small or large eggs will slightly vary the amount of dough you use, with small eggs you can simply use one more egg.

Use wheat flour type 405, you can also use gluten-free flour such as Schär Mix Cakes and Biscuits.

Coated pans usually have a lifespan of 2-4 years. After that, the coating is broken and you have to buy a new pan.
An iron pan will last a lifetime, but you must use it regularly and coat it with oil after each use to prevent rusting.
I recommend you a high quality copper pan, it will last a lifetime, you will save energy and the ingredients will not stick.
What kind of apple can you recommend for apple pancakes?
For example, for apple pancakes is suitable Boskop, Jonagold, Elstar, as well as Cox orange.
Boskop -> A very fruity and very aromatic apple variety.
Jonagold -> A sweet and balanced tart tasting, pleasant apple variety.
Elstar –> A particularly aromatic variety of apple.
Can I save sugar in apple pancake batter?
Replace sugar with sweetener or birch sugar.
Note, however, birch sugar is not a good idea for sensitive stomach and intestines, as this type of sugar can irritate.
You can replace vanilla sugar with real vanilla pulp from the vanilla bean or use a vanilla flavoring.
Can I add the apple pieces to the batter right away?
I would not recommend this method to you, as you cannot control the amount of batter as you pour it into the pan.
What is the difference between apple pancakes and apple Palatschinken?
Palatschinken is the Austrian name for pancakes.
The dough is prepared in the original from 120 g flour, 4-5 eggs, 250 ml milk and a little salt.
Apple pancakes according to this recipe you can prepare less sweet.
How to prepare an apple pancake with yeast?
Use 150 g of flour and 250 ml of milk and 4 eggs and mix or blend with a quarter packet of dry yeast.
The recipe also works with 4 g of fresh yeast, which you dissolve in a little warm milk and add instead of the dry yeast.
The dough tastes more harmonious if you add 4 pinches of salt, 1 packet of vanilla sugar, 2 tsp of sugar.
Leave the pancake batter to rise for an hour. During this time, the dough gains volume.
You can then bake the dough with the apples.
Does apple pancake taste better with mineral water?
The carbonic acid from the mineral water makes the pancake batter a little fluffier and fluffier when baked.
