3. Tips to Prepare Peas

First things first… fresh or frozen peas are deliciously green. If you want to keep the green colour, you can only cook the garden peas for a short time without a lid.

We know the typical grey colour from cooked canned peas. This vegetable is only an option in emergencies!

Tip from Chef Thomas Sixt
Fresh peas taste delicious. You can also use frozen peas. Leave canned peas on the shelf!

3.1 Blanching Peas

Put the frozen or fresh field peas in boiling salted water and cook until al dente.

Then let cool in cold water or ice water and later toss in butter or brown butter, refine and serve.

3.2 Preparing dried peas

Soaking dried peas in cold water is a common practice.

I prefer to use the dried peas for blind baking tartlets or for making flour.

If you want to use the dried peas for stews or other preparations, please cook them directly in vegetable broth.

This is similar to lentils, I don’t like it when the dried legumes get soaked with water and taste bland!

Cook legumes in vegetable broth… Don’t be afraid! Lentils and peas are always cooked and taste delicious!

Tartes or cake bases baked blind with peas. You use the dried legumes when baking short pastry to weigh down.
