Gyros Recipe with Cooking Video Instructions

The gyros recipe with tsatsiki is one of my favorite quick dishes.
I have refined this well-known Greek dish in my own way.

Gyros with Tzatziki

Ingredients

some | butter | |
3 | pc | glove of garlic |
180 | g | cucumber |
80 | ml | soy cream yoghurt (I like to use sheep milk yoghurt) |
7 | pc | young onions |
200 | g | pork fillet |
majoram | ||
fresh thyme | ||
Oregano | ||

Supplement to the gyros:
Preparation step 1
Prepare potato
Prepare the potatoes as a side dish:
Boil 3-4 small potatoes per person in salted water, peel and keep warm in a saucepan with a little butter.
Prepare bread to taste in a little olive oil with a clove of garlic.
Preparation step 2
Prepare tzatziki
Place the sliced cucumbers in a bowl and season with salt and pepper.
Pour the soy cream over it and let it marinate.

Refine tzatziki
Finely weigh the garlic, add a little salt and press finely to taste.
Add some garlic to the cucumbers and mix them together.
Set aside the rest of the garlic for the meat.
Prepare gyros and meat:

Prepare onions
Cut the spring onions into fine rings and put them in a bowl.
Alternatively, you can use strips of white, yellow, or red onion.
Clean the pork fillet and cut the tendons into 5 mm thick slices.

Prepare herbs
Finely chop about a good tablespoon each of freshly plucked marjoram, thyme and oregano.

Prepare pan
Preheat a pan to prepare the meat.

Or use a coated pan.

Roast meat
Sear the meat on both sides in a pan without fat over high heat.
Move the pan away from the heat source.
Add onions and garlic, season with paprika, salt and pepper and add olive oil.
Grate some lemon zest into the pan, add herbs.
The gyros pan stand at moderate residual heat and let it soak.
Serve the gyros:

Side dishes
Season the potatoes with salt and pepper and arrange on the warmed plates.
Mix the tsatsiki – cucumber salad again and place in small bowls on the plate with the potatoes.

Serve
Season the gyros pan again with salt, pepper and olive oil and place on the plate.
Decorate with tomato halves and fresh onions to taste and serve.

You can also serve the pork tenderloin pink.
Therefore, I fry the meat without fat or with very little fat at very high heat.
This comes close to grilling and the meat gets the corresponding, fine aromas.

3. Prepare Original Gyros
In Greek, the term gyros has, among other things, the meaning of spinning top or round.
It is assumed that before horizontal grilling, vertical grilling was common.
In the gastronomic sense, gyros stands for the rotisserie and is “related” to the Turkish doner kebab.
For the gyros, selected and particularly soft pieces of pork are processed, such as pork neck.

4. Tip for Gyros Meat
Since I don’t have a gyros grill at home, the gyros is prepared in the pan.
I prefer to use pork fillet, although it is slightly more expensive, it is unbeatably fine in terms of consistency and taste.

5. Tsatsiki for Gyros
I was wondering, different spellings are possible:
I found Tzatziki, Tsatsiki or Zaziki . When it comes to preparation, we largely agree:
Tsatsiki: Garlic, yoghurt and cucumber are the ingredients for this cold sauce.

With the Tsatsiki I have made various attempts with soy cream, the version with soy doesn’t taste bad, currently I’m using sheep’s milk yoghurt again.
My tsatsiki in the video turned into a cucumber salad, I like cucumbers and finally more vegetables are healthy too!
6. Typical Spices for Gyros Pan
Anyone who follows my cooking blog regularly knows my love of experimentation.
I have developed an interesting gyros spice mix.
Seasoning mix and suitable spices:
- marjoram
- oregano
- thyme
- Lemon peel
- Sweet paprika
This results in a very special combination that is powerful and refreshing at the same time.
In the original, the meat is seasoned with salt, pepper, garlic, oregano and thyme, sometimes supplemented with cumin, marjoram and coriander.

Where can I get sheep milk yoghurt from? 🙂 I would like to try this for my tzatziki too!
Hello Valerie, I made the recipe a long time ago when I was still living in Vienna and there was sheep yoghurt in the supermarket. At Edeka there is sheep's milk yoghurt from Greece. It sure is a good idea. Kind regards Thomas
